Rodízio is the gaucho way of serving: meat is roasted on long skewers over fire and carried to the table, where it is carved onto your plate until you say stop.
The gauchos keep coming: every cut on the fire, carved at your table, as often as you like.
Pause. Visit the market table, finish a glass, breathe. Turn it green when you are ready again.
The evening
- Sit down. A server explains the card and brings pão de queijo.
- Visit the market table: forty dishes, take what you like, come back as often as you want.
- Turn the card green. Gauchos arrive with skewers in a steady rotation; picanha first, then the rest.
- Turn it red to pause. Green again when ready. Ask for any cut by name at any time.
- Dessert and coffee are ordered from the table. Gratuity is not included.

Time at the table
There is no limit on weekdays. Friday and Saturday dinner reservations are held for two hours; walk-ins are seated as tables open.
Children
Under six eat free from the market table; ages six to ten are half price for the full rodízio.
Dietary
The market table is largely gluten-free and carries many vegetarian dishes. Meats are seasoned with salt only unless marked; ask about the marinades on lamb and chicken.
Groups
Parties of eight or more: reserve by phone. Groups of twenty or more get a private section and a fixed dinner price; see Catering.
